I’m slowly going back to baking a bit. It’s not easy with the constraints of being dairy-free, sugar-free, gluten-free, and low fruit, but there are still things I can bake. I made some lovely zucchini corn bread muffins the other day.
But the most exciting thing I’ve made so far is these peanut butter cookies. They look like cookies, they taste like cookies, but they have none of the things I avoid. It’s a miracle! They must also be the simplest cookies to make, ever.
Peanut Butter Cookies
adapted from The Gluten Free Girl
makes 12 cookies
1 C peanut butter (or any nut butter)
1 tsp baking powder
1 tsp vanilla
3 Tbs honey
In a small bowl mix the nut butter, egg, vanilla, and honey. When combined, mix in the baking powder. Scoop and roll into balls. Place on baking sheet. Using a fork, press the cookie down one way and then turn the fork 90 degrees and press again. This makes the traditional peanut butter cookie pattern on the top.
Bake at 180C/350F for approx. 9 minutes, until the cookies are puffed and slightly golden. Enjoy!
